Canned "Squirrel" Day

Today's squirrel to be chased was making fig preserves. I had purchased some Pomona's Pectin which allows you to make lower sugar preserves. I got 9 half pints canned (so far I counted 8 that have made that lovely "kuh-plink" sound as they seal. I also have almost a pint to go in the refrigerator. My canner has room for 9 half pint jars, so I just kept the other for "now." I will probably half it and take Mom half of the "now" batch.

I need to go pick more figs and make another batch tomorrow. I love to take advantage of the figs while they are in season. There are few things more delightful than home canned preserves with breakfast - especially in the winter when fresh fruit is out of season.

Did you say pick figs? No such thing (that I know of) in NJ. How do you do that, from trees? Bushes? Is this a southern thing? Output looks fabulous. I guess canning is not a lost art. I remember my grandmother doing it just to have food from the garden year round. Her cellar-way shelv s were lined with jars. It was survival for them, but suspect now it's more of a hobby and a bonus to enjoy those preserves with breakfast. I don't know who was born more after one's time, you or Kathy(Inozarks)!

I don't think I have ever had fig preserves.....you are certainly very busy.

I love figs but have never had fig preserves. I'm interested in knowing the answers to Barb's questions. I'm a city girl, born in Chicago married to a country boy. I used to can before I began my work career MANY years ago. He would love it if I canned again....I WOULDN'T. I'm going to check for fig preserves on my next trip to Amish country.
